Low carb blueberry smoothie
Ingredients
- 11⁄3 cups 325 ml canned, unsweetened coconut milk
- 3 oz. 85 g frozen blueberries or fresh blueberries
- 1 tbsp 1 tbsp lemon juice
- ½ tsp ½ tsp vanilla extract
Instructions
- Place all ingredients in a blender and mix until smooth.
- Taste, and add more lemon juice if desired.

If enjoying this smoothie for breakfast, we recommend increasing the protein for a more filling and nutritious meal.
If you tolerate dairy, replace the coconut milk with greek yogurt and add 2 tbsp whey protein isolate per serving. Add some water for a runnier consistency if needed.
If you don't eat dairy products, eat a couple of eggs on the side.

I'm allergic to most starches and yeast, just to name a few of my food allergies, as well as being gluten intolerant (thanks to an autoimmune thyroid disorder). LCHF has been perfect for me.
My gluten-free and sugar-free cheesecake was a major hit at my Mom's birthday party. It was more popular than the Black Forest cake that was also available. I made it with a pecan and almond crust and used honey as a sweetener (you need so much less than if you used sugar and I refuse to use artificial sweeteners). While it wasn't the lowest carb dessert it was a lower carb, special occasion treat. I use local honey to help with my seasonal allergies. My husband and I feel so much better on LCHF. It is surprisingly easy. We thought we'd miss potatoes and other starches but we really don't, especially since I'm now not eating foods that made me sick.

Yes, there are different kinds. Use one that is unsweetened and I hope you'll find one you like. The cans we use are 400 ml (about 13 fl.oz).

Are these portion sizes for both men and women?
1) The blueberry content it's very low so therefore it doesn't taste that great (i used coconut milk for the first time) if i use coconut cream and water to make it thicker, but reduce it slightly and add a few more blueberries, would that be ok?
2) do i have to add in vanilla extract and lemon juice or can i just use the milk and blueberries?
