Low carb banana waffles
Ingredients
- 1 1 medium unripe bananamedium unripe bananas
- 4 4 eggeggs
- ¾ cup (3 oz.) 180 ml (85 g) almond flour
- ¾ cup 180 ml coconut milk
- 1 tbsp 1 tbsp ground psyllium husk powder
- 1 pinch 1 pinch salt
- 1 tsp 1 tsp baking powder
- ½ tsp ½ tsp vanilla extract
- 1 tsp 1 tsp ground cinnamon
- 2 tbsp 2 tbsp coconut oil or butter, for frying
Instructions
- Mix all of the ingredients together and let sit for a while.
- Make in a waffle maker or fry in a frying pan with coconut oil or butter.
- Serve with hazelnut spread or whipped coconut cream and some fresh berries, or just have them as is with melted butter. You can't go wrong!
Tips
Got extra ripe bananas? Make more waffles and freeze the leftovers for a quick and easy future morning. Wrap each pancake individually in plastic wrap for easy defrosting.
Here's how to whip coconut cream. Let a can of coconut milk sit in the refrigerator for at least 4 hours to separate the cream from the water. Open the can carefully and remove the cream part with a spoon. Place in a bowl and whisk with a hand blender for a few minutes. Save the coconut water for use in smoothies!

I haven't done the recipe but I guess except for taste bananas add some sweetness...but my guess is that you can do them without bananas and that will actually mean that you skip a lot of carbs. :)

Hi Stacey , You can find psyllium husk in health food stores.
Some people have used chai seeds in stead.
I carefully run a knife around the edge to loosen, then with the knife tip,I ease some of it away from the iron, then gently, bit by bit ,ease a large spatula under it till it is as close as possible, supporting half of the waffle. Then I flip it over in half. Now it seems to be stable enough to remove from the iron, while it is folded in half. When plated, you can flip it into a circle again. And yes. Oil the Iron well. Hope this helps.
