Italian cabbage stir-fry
This meal is simple rustic deliciousness. The combination of tart cabbage, luscious basil, and savory beef is melt-in-your-mouth fabulous. This is keto at its finest.

- 1½ lbs 650 g green cabbage
- 1 oz. 28 g butter
- 1¼ lbs 550 g ground beef
- 1 tbsp 1 tbsp white wine vinegar
- 1 tsp 1 tsp salt
- 1 tsp 1 tsp onion powder
- ¼ tsp ¼ tsp pepper
- 2 tbsp 2 tbsp tomato paste
- 2 2 garlic clove, finely choppedgarlic cloves, finely chopped
- 3 oz. 85 g leek, thinly slicedleeks, thinly sliced
- 2⁄3 oz. (71⁄3 tbsp) 19 g (110 ml) fresh basil, chopped
- 1 cup 240 ml sour cream

Making low carb simple
Instructions
- Shred the green cabbage finely with a sharp knife or in a food processor.
- In a large frying pan, melt half of the butter over medium heat. Add the cabbage and fry for about 10 minutes or until just softened.
- Add vinegar, salt, onion powder, and pepper. Stir and fry for 2-3 minutes or until well incorporated. Transfer the sauteed cabbage to a large bowl.
- Heat the rest of the butter in the pan. Add the garlic and leeks, and sauté for a minute.
- Add meat, and continue frying until cooked through. Sauté until most of the liquid has evaporated.
- Add tomato paste and mix well. Lower the heat a little and add reserved cabbage and fresh basil. Stir until cooked through.
- Adjust seasoning and serve with a dollop of sour cream.

I added an extra tablespoon of tomato paste to give the mince a bit more flavour.
We don't want to promote to much "counting" that's why we only have the carbs in gram. (that's the most important info when following LCHF)
But If you need more information then use the formula below to calculate, a bit complicated though. ;-)

I hesitate at trying this recipe because of the 33 grams of protein. That’s HIGH not knowing the fat amount
Fat is 91 gram.
Carb calculator says 6g in 100g cabbage so how can this meal be 9g if the cabbage alone is 200g?
I make this meal very often and it has not disturbed my state of ketosis.
Is there an alternative to meat or poultry to go with the cabbage... type of fish or something please...
I didn't have basil so I added a bit of curry spice and chilli flakes and I cant wait to make it again! I will add just a couple of nuts and it will be a winner!

Yes, this would freeze and reheat without issue.
That would change the composition of the dish significantly but if you like broccoli and cauliflower but don't like cabbage then it might be a good substitute for you.
