Crunchy keto berry mousse

Ingredients
- 2 cups 475 ml heavy whipping cream
- 3 oz. (2⁄3 cup) 85 g (160 ml) fresh raspberries or fresh strawberries or fresh blueberries
- 2 oz. 55 g chopped pecans
- ½ ½ lemon, the zestlemons, the zest
- ¼ tsp ¼ tsp vanilla extract

Making low carb simple
Instructions
- Pour the cream into a bowl and whip with a hand mixer until soft peaks form. Add the lemon zest and vanilla towards the end.
- Add berries and nuts to the whipped cream and stir thoroughly.
- Cover with plastic wrap and let sit in the refrigerator for three or more hours for a firm mousse. You can also enjoy the dessert immediately if you don't mind a less firm consistency.
Tip
We like a blend of raspberries and blueberries. What do you like? Try any combination — strawberries, cherries, blackberries, or red and black currants.

The carbs quoted are total carbs which your body will use, with fibre added on top. You don't subtract fibre from total carbs (unlike US guidelines).
If you look elsewhere on the site, there are really good guides to carb amounts in fruit, veg, nuts - the "eat this not that" guides. Berries, pecans and double (heavy) cream are all really low in carbs.

I started the diet about 6 weeks ago .I enjoy it but my weight goes up & down some times its past my 10 pounds another week its down 2 to 3 pounds .I do exercise most days I run & walk the pool for an hour .Is this weight going back & forth normal or should I be doing something different ?
I hope you are taking measurements of your waist as well...and not only your weight. It is possible to lose fat and put on muscle. Do you notice your clothes fitting you differently? It has happened to me where I go through months of almost no weight loss, but my body looking better and leaner...and clothes feeling very loose on me. Also, make sure you stay hydrated and drink some broth on a daily basis, to restore electrolytes and prevent dehydration.
I agree - is there a list of food items anywhere that we can refer to? Would make it much easier to manage ingredients in recipes.
I am new to Keto and looking for tasty food. I want to make this recipe but don't like pecans. Can I switch them for almonds? Or do I just leave the nuts out, thanks.

You would want to use coconut cream because of the higher fat content. Compare brands as carb count and ingredients can vary.
Whole, though if yours are unusually large you can cut them.
1 slab of 80% premium choco, 400ml whipped cream, 4 egg yolks , whip egg whites
melt choco in double saucepan, fold in egg yolks then whipped cream then egg whites.
