Ingredients

  • 1 lb 450 g green cabbage
  • 2 oz. 55 g butter, divided or coconut oil
  • 1 tsp 1 tsp salt
  • 1 tsp 1 tsp onion powder
  • ¼ tsp ¼ tsp ground black pepper
  • 1 tbsp 1 tbsp white wine vinegar
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 1 tsp 1 tsp chili flakes
  • 2 tbsp 2 tbsp finely chopped, or grated, fresh ginger
  • 1¼ lbs 550 g ground beef or ground turkey
  • 3 (1½ oz.) 3 (45 g) scallion, chopped in 1/2" (1.5 cm) slicesscallions, chopped in 1/2" (1.5 cm) slices
  • 1 tbsp 1 tbsp sesame oil
Wasabi mayonnaise

Instructions

  1. Shred the cabbage finely using a sharp knife or a food processor.
  2. Fry the cabbage in half of the butter in a large frying or wok pan on medium-high heat. It takes a while for the cabbage to soften, but don't let it turn brown.
  3. Add spices and vinegar. Stir and fry for a couple of minutes more. Put the cabbage in a bowl.
  4. Melt the rest of the butter in the same frying pan. Add garlic, chili flakes and ginger. Sauté for a few minutes.
  5. Add ground meat and brown until the meat is thoroughly cooked and most of the juices have evaporated. Lower the heat a little.
  6. Add scallions and cabbage to the meat. Stir until everything is hot. Salt and pepper to taste. Drizzle with sesame oil before serving.
  7. Mix together the wasabi mayonnaise by starting with a small amount of wasabi and adding more until the flavor is just right. Serve the stir-fry warm with a dollop of wasabi mayonnaise on top.

Substituting ingredients

Want variety? You can replace the beef with other kinds of protein like ground chicken, pork or lamb. If you have other sorts of cabbage like red cabbage or savoy cabbage, they will work just as fine.

If you don't like mayonnaise you can substitute that for crème fraîche, sour cream, or even cream cheese.

Storing and reheating

This dish keeps in the fridge for at least 3-4 days. You can also store it in the freezer for up to 4 months.

Thawing and reheating can make the cabbage release its liquids so the dish may be a bit more watery compared to freshly cooked. This does not affect the flavor of the dish.

    That is a personal decision, but the longer you can abstain from alcohol, the better your results will be.

    OMG I can’t believe how good this is, and even after I only put 1 tablespoon of butter, no salt, and no black pepper in it.     This recipe makes 4 total servings, so it works for 2 people if you want a dinner and a lunch.

    The final volume of the dish is going to vary widely based on how much your ingredients cook down. It may be easier to serve it out into 4 equal portions since this makes 4 servings.

    I am not familiar with Wasabi. I looked it up and it said, 1) most store bought Wasabi is not really Wasabi, additives and such, and 2) gave recipe for making Wasabi and sugar was the third ingredient. How is that me to?

    Yum! I've made this so many times, I love it! I add extra garlic and ginger, and I also add a couple teaspoons of curry powder and some chicken stock... it just gives it another delicious layer to the flavour. Delish!

    Hi, there, I'm someone who has worked my entire life with helping drug addicts and I just wanted to point out that I find the use of the term "crack slaw" in the description of this recipe insensitive. Crack addicts exist at all levels of society and many people and families have struggled with the suffering of an addicted friend or relative. It's one thing for us to make discreet off-colour references to crack as individuals, in our private lives, but I find that referencing it in such a light, offhand way on a public platform like this- particularly as a website that's concerned with health and well-being- is careless and irresponsible. There probably will be someone reading it at some point for whom it brings up a load of difficult memories or experiences, and who won't find it quite so clever or funny. I don't mean to moralize or put anyone down, only to point out something you might want to think about with regards to the kind of imagery you put forward and the effects it can have on people in reality. Otherwise I'm really pleased with this website and the recipes I've been following from it. They've been delicious and really efficient in helping me toward my weight-loss goals.

    I made a couple of changes to this recipe. I instead of white vinegar I used Apple Cider Vinegar instead. I also used half grass fed beef and hot Italian sausage. This recipe was delicious and will be added to my rotation.
